Ingredients
- 200g dried egg noodles
- 200g mung bean sprouts, washed and dried
- 3 eggs, beaten
- 2 chicken drumsticks, skin removed, cut into bite-sized pieces
- 2 tablespoons LKK premium soy sauce
- 2 tablespoons LKK oyster sauce
- 1 tablespoon ABC sweet soy sauce
- Pickled chilli, for garnish
- 4 cloves garlic, finely diced
- White pepper, to taste
- Vegetable oil
Method
- Prepare the Noodles 1. Bring 2 cups of water to a boil in a wok. 2. Add the dried egg noodles and stir with chopsticks to separate them. Cook for about 3 minutes. 3. Drain the noodles in a colander and immediately rinse under cold running water to stop the cooking process. Let them dry in the colander. 4. In a large bowl, mix 1 tablespoon vegetable oil, 2 tablespoons LKK premium soy sauce, 1 tablespoon ABC sweet soy sauce, 1 tablespoon LKK oyster sauce, and a few dashes of white pepper. 5. Add the noodles and toss well until evenly coated. Set aside.
- Prepare the Egg 1. Wipe the wok clean and heat it on high until smoking. 2. Add 1 tablespoon vegetable oil and swirl to coat the surface. 3. Reduce the heat to medium, pour in the beaten eggs, and swirl to form a thin pancake. 4. Once set, remove the egg pancake, roll it up, and slice into 1cm strips. Set aside.
- Cook the Chicken meat 1. Heat the wok again on medium-high and add 1 tablespoon vegetable oil. 2. Sauté the garlic until fragrant and slightly golden. 3. Add the chicken pieces and spread them out in the wok. Cook for about 3 minutes, stirring occasionally, until browned on all sides. 4. Stir in 1 tablespoon LKK oyster sauce and cook for an additional 20 seconds.
- Stir-Fry Everything Together 1. Add the mung bean sprouts to the wok and stir-fry for 10 seconds. 2. Add the noodles to the wok and stir-fry for about 3 minutes, using chopsticks if necessary to combine the ingredients evenly.
- Serve 1. Transfer the noodles to a serving plate. 2. Top with the sliced egg strips and garnish with pickled chilli. 3. Serve immediately and enjoy!
