- 400 gChicken,1/2 cup Valcom Yellow Curry Paste,400mls TCC Coconut Milk, 2 tbls Squid Brand Fish Sauce,1/3 cup Valcom Bamboo Shoot Slices, 150g Sweet Potato,200g baby beens, 12 Solanato Tomatoes halved, 60g Baby Spinach.
- Heat Oil in a large frying pan or wok, add sliced Onion and cook for three mins or until softened, stir in curry paste, thinly sliced chicken fillet and diced sweet potato and cook for 1 min until fragrant. Add coconut milk, fish sauce, beans and bamboo shoots simmer gently for six minutes or until potato is just tender and chicken cooked through add halved tomatoes and baby spinach, cook for three mins. Garnish with Coriander. Serve with steamed rice
