Ingredients
- 400g chicken thigh
- Onion
- Sweet potato
- Oil
- Long grain rice
- Golden curry mix mild
Method
- Heat 1tbs of oil in saucepan
- Cook rice as per instructions
- Fry onion, sweet potato and chicken for 5 minutes
- Add 540ml water
- Bring to boil, then lower heat and simmer for 15 minutes
- After 15minutes break up Golden Curry mix and stir through for 5 minutes until sauce thickens
- Serve with rice and fresh or dried chilli to taste
