Ingredients
- 500g chicken breast
- 1 carrot
- 1 onion
- Short grain or Sushi rice
- Panko breadcrumbs
- 1 egg
- Golden Curry cubes
- Edamame
Method
- Boil sliced carrot and onion in 500 ml water for 10 minutes
- Take off heat and stir through curry cubes. Set aside.
- Cut chicken breast lengthwise and coat in egg and panko crumbs.
- Shallow fry chicken in vegetable oil for a couple of minutes on each side, depending on thickness.
- Serve chicken on top of rice and top with sauce and edamame. Garnish with pickled vegetables and mayonnaise.
