Ingredients
- 1 packet of S&B Golden Curry Medium Hot Sauce Mix
- 500g pork mince
- 2 chicken breasts
- 1 brown onion
- 3 carrots
- 3 potatoes
- canola oil
- 2 eggs
- 2 cups of plain flour
- 3 cups of panko breadcrumbs
- salt
- pepper
- 2 cups of rice
Method
- Heat a dash of olive oil in a large cooking pot on high heat
- Finely chop up brown onion and add to pot with pork mince. Stir till mince is browned
- Add chopped carrots and potatoes and cook for around 5 minutes, allowing it to soften
- Put rice in rice cooker with 3 cups of water to cook
- Add three cups of water to the pot and place lid on. Reduce to low heat and leave to boil
- Prep 1 bowl of whisked eggs, 1 bowl of panko breadcrumbs and 1 of salt, pepper seasoned flour
- Dip and coat chicken in flour, then egg, then panko breadcrumbs. Ensure it’s well coated.
- Fill a frying pan halfway full with canola oil and heat for a couple minutes
- Place chicken breasts two at a time in hot oil and cook for ~3 minutes on each side
- Remove chicken and allow it to cool for ~2 minutes before cutting into thin slices
- Go back to vegetable pot and add curry blocks one at a time and allow curry to thicken and blend together
- Plate up! First rice, then curry and then chicken on the top
