Ingredients
- 400g rice noodles
- 2 eggs
- 1 jar of Valcom pad Thai paste
- 1/2 capsicum
- 100g hard tofu
- 300g chicken
- 30g cashews
Method
- put the noodles in boiling water and when they are done, remove the water and set aside
- cut the chicken into small pieces and cook in a wok, add the pad Thai paste and mix well.
- cut the capsicum into strips and the tofu into cubes and add to the wok
- add the noodles to the wok mixture and stir fry
- put the mixture to one side of pan, add oil and 2 beaten eggs.. Cook for 2 minutes, then stir through noodles until well combined.
- once fully cooked add some cashew nuts
