
Ingredients
- 3 tbsp white miso paste
- 2 tbsp rice wine vinegar
- 3 tbsp soy sauce
- 4 tbsp sesame oil
- 1/2 tsp finely grated garlic
- 1 tbsp finely grated ginger
- 4 tbsp white sugar
- 4 tbsp Kewpie mayo
- 360g dried soba noodles
- 3 cups of shredded store-bought roast chicken breast
- 4 cups of finely shredded red cabbage
- 2 small carrots, peeled and julienned
- 4 spring onions, finely sliced
- 1 cup edamame beans
- 4 red radishes, thinly sliced
- Black sesame seeds to garnish
Method
- Whisk dressing ingredients (all above soba noodles) together until smooth
- Prepare soba noodles according to packet instructions. Rinse under cold water to stop the cooking of noodles once cooked.
- Toss chicken, cabbage, radish, spring onions, edamame beans, carrot and soba noodles together with dressing. Top with black sesame seeds and serve.
