Ingredients
- Kewpie Mayo - 2 tbsp
- Chicken Breast - 400g
- Rice Vinegar - 3 tbsp
- Soy Sauce - 2 tbsp
- Black Sesame Seeds - 1 tsp
- Red Miso Paste - 4 tbsp
- 1/2 cucumber
- 1/2 Red cabbage
- Spring onion
- coriander
- Soba Noodles - 180g
- sesame oil - 2 tbsp
Method
- Step 1 - Make Miso dressing. Whisk miso, rice vinegar, soy sauce, sesame oil and kewpie mayo in bowl.
- Step 2 - Cook soba as per packet directions.
- Step 3 - Slice vegetables and toss.
- Step 4 - Cook chicken breast in pan. Steam with 3/4 cup of water. Shred with 2 forks.
- Step 5 - Serve and divide into bowls. Add sesame seeds and coriander on top to your liking.
