Ingredients
- Chicken breast x 2
- 1/4 cup Mirin
- 1/4 cup Cooking Sake
- 1/4 cup Tamari
- 1 tbsp Brown Sugar
- Sesame seeds
- Kewpie
- 1 cup edamame
- 1 carrot
- 1/4 white or purple cabbage
Method
- Combine the teriyaki sauce (mirin, tamari, sake, brown sugar) until brown sugar is dissolved.
- In a large saucepan cook chicken 2 mins on each side then add teriyaki sauce and cook for 8 minutes or until chicken is cooked through.
- Whilst chicken is cooking, shred cabbage and julienne the carrot.
- Cook rice per instructions (for ease I used microwave Sun rice sachet).
- Build your bowl!Add rice, carrot, cabbage, edamame, sliced chicken.
- Sprinkle sesame seeds on top and add a generous dollop of kewpie to finish it off!
