Chicken Teriyaki Sushi

Ingredients
- Yaki Nori for sushi
- 1 cup sushi rice
- 3tbsp sushi seasoning
- 1 chicken breast fillet
- 3 tbsp teriyaki marinade
- 1/4 carrot thinly sliced
- 1/4 cucumber thinly sliced
- Kewpie mayo

Method
- Rinse sushi rice, then bring to boil with 1 & 1/2 cups of water, then lower to a simmer until all water is absorbed. Let cool, then add your sushi seasoning and fold in.
- Thinly slice chicken breast and place into a bowl with teriyaki marinade. Cook on frypan and set aside.
- Slice cucumber and carrots and set aside for assembly.
- Lay out your nori shiny side down on top of baking paper or sushi mat and spoon rice into the midde, leaving 1cm free at both ends. Layer your toppings, cucumber, carrots and chicken with a drizzle of kewpie mayo. Roll your sushi tightly with your mat or baking paper, and wet the free 1cm end of nori just before you finish so it sticks together. This should make 3 large sushi rolls to cut in half, for 6 servings. Enjoy!
