- Soysauce and Fish sauce

Method
- Clean the fish: Remove all fins, gills, and scales.Prepare the fish: Stuff the fish with fresh ginger and garlic slices.Season the fish: Place the fish in a large bowl and sprinkle ground pepper over it. Drizzle squid brand fish sauce directly on the fish.Cover and bake: Cover the bowl with aluminum foil and bake in a preheated oven at 180°C for 20 minutes.
- Sauté aromatics: In a pan, sauté chopped onion and 1 tsp of chili flakes until fragrant.Add liquids: Pour in 100 mL of Lee Kum Kee soy sauce and 100 mL of water, and bring the mixture to a boil.Sweeten: Add a pinch of sugar to balance the flavors. Stir well until the sugar dissolves.
- Heat olive oil: In a small pan, heat olive oil over medium heat until it begins to warm up
- Apply the sauce: Once the steamed fish is ready, pour the cooked spicy sweet sauce over the fish.Garnish: Sprinkle all the chopped coriander and leeks on top of the fish for added freshness and flavor.Finish with hot oil: Carefully drizzle the hot olive oil over the fish to enhance the aroma and flavor then garnish with fried garlic.
