Ingredients
- "For the Meatballs" :*500 gr lean beef mince*500 gr lean pork mince*1/2 cup panko breadcrumbs*1/2 TSP minced garlic*1/2 TSP minced ginger*1 whole egg*I tbsp soy sauce*Salt & pepper to taste
- "Spicy Coconut Sauce" :* 1 Can Volcom Coconut Milk* 1tsp minced ginger*1 TSP minced garlic*1/4 cup finely chopped onion*1 or 2 tbsp Gochugang paste* 2 tbsp soy sauce* 1 cup beef broth
- "Accompaniments" :*3 cups cooked sweet potato noodles* 2 cups steamed snow peas * 6 pieces steamed Bok Choy* 1 bunch Enoki mushrooms* Finely chopped spring onion
- 12 slices Lotus RootSesame seeds
Method
- Preparing the meatballs:Combine beef & pork mince in large mixing bowl ( or stand mixer ) add panko, garlic, ginger, egg , soy sauce, salt & pepper. When combined well roll into ping pong sized meats balls. In heavy bottomed pan heat 2 tbsp cooking oil over medium heat - brown meatballs until all sides are seared & golden brown. Remove meatballs from pan
- Making the Sauce:In the same pan meatballs were browned in add the minced garlic, ginger & onion...saute for a few minutes before adding the Gochugang paste - add the beef stock scraping up all the browned bits on bottom of pan - once the stock has reduced by 1/2 add the coconut milk - once sauce starts to simmer add the browned meatballs & lotus root sliced, simmer the meatballs for 20 minutes over low heat until cooked.
- Dishing Up :In six bowls place in each - 1/2 cup cooked sweet potato noodles ( or steamed rice if preferred) , steamed Bok chok, steamed snow peas , enoki mushrooms, sprinkle sesame seeds
