
Ingredients
- 1 large cucumber
- 2 tbsp Rice wine vinegar, chili oil to taste. 1 tsp sugar 1 tbsp sesame oil 2 cloves garlic, 2 tbsp light soy, sesame seeds to pickle the cucumber
- Soba noodles
Method
- Smash and slice the cucumber. Salt for 30 minutes then drain and rinse.
- Combine pickle ingredients- add 1/3 cup of very hot oil to cook raw pickle ingredients- optional. Refrigerate pickled cucumber for 30 minutes
- Cook soba noodles 4 minutes then cool in iced water. Stir through pickles. Garnish with more sesame seeds and sliced spring onion or coriander
