Ingredients
- 500g Chicken Mince
- Garlic clove
- 1 tbsp Rad Curry Paste
- 1 tbsp dark soy sauce
- 1 tsp curry powder
- 1 1/2 chicken stock
- Thick Egg noodles
- 3/4 cup coconut milk
- 3 tbsp peanut butter (crunchy is best)
- Baby spinach 2-3 handfuls
- 2 tbsp apple cider vinegar
- Coriander to garnish
Method
- Add chopped garlic to pan, add mince, cooked. Add curry paste, soy, curry powder stir. Add chicken stock, simmer 1 min, add cooked egg noodles and coconut milk and peanut butter. Simmer. Add vinegar and baby spinach. Once spinach had wilted serve with coriander. Optional add crushed peanuts with coriander.
