Ingredients
- *Crispy Five Spice Duck Breast*.* 2 PC Luv a Duck - Duck Breast*1 TSP Chinese Five Spice *1/2 TSP Salt
- *Spicy Noodle Cake*.*2 cups cooked rice stick - or bean thread noodles* 1 TSP Chiu Chow Style Chilli Oil*1/4 cup finely chopped spring onion*1/4 cup chopped coriander leaves*1 egg - lightly whisked1/2 tsp sesame oil1tsp sesame seeds 2 tbsp rendered duck fat ( for pan frying noodle cakes)
- "Spiced Plum Compote" *5 fresh black plums - roughly chopped*1 tbsp brown sugar*1 TSP peanut oil*1 TSP ground ginger*2 tbsp finely chopped shallots*1/3 cup Plum wine ( or can substitute with red wine )*1 TSP Chiu Chow Style Chilli Oil
- *Garnish** Sliced fresh plum *Steamed Bok choy* Fresh coriander leaves*Sliced spring onion
Method
- Crispy Duck Breast :Score the fat side of duck breast in a "cross hatch" pattern. Season with salt & Chinese Five Spice powder . Place duck breast fat side down on heavy bottomed skillet and cook med-low heat for approx 20 mins. The duck fat will melt away & the remaining fat will become crispy. Once the duck breast is 80% cooked flip the breath so flesh side is directly on heat & cook a further 2 minutes. Remove duck breast from pan & set aside until ready to serve. The duck meat should be cooked medium ( slightly pink still )
- Crispy Noodle Cakes:*Combine all Noodle Cake ingredients in a bowl ( except for rendered duck fat ) and combine well. In heavy bottomed pan add 1 TSP rendered duck fat, add approx 1/2 cup noodle mixture. Pan fry both sides until crispy.Set aside until ready to serve
- Spiced Plum Compote:*In heavy bottomed saucepot over medium heat add peanut oil , minced ginger, shallots , chopped black plums , Chiu Chow Style Chilli Oil & brown sugar. Saute until sugar starts to caramelize. Add Plum Wine . Let mixture simmer until reaches a " jam like consistentcy ( approx 20 mins) . Remove from heat until ready to serve.
- Place one noodle cake on each plate & 2 PC of steamed Bok Choy. Slice the duck breast thinly & arrange alongside the spices noodle cake. Serve with Spiced Plum Compote & additional sliced plums for garnish if desired.
