Ingredients
- 12 green prawns
- 1 tab Valcom Green Curry Paste
- 200 ml Coconut Cream
- 1 tsp Fish Sauce
- 1 tsp Brown Sugar
- 10 Cherry Tomatoes cut in half
- 1 tsp Lime Juice
- Enough Rice for 2 people
- A sprinkle of Coriander Leaves
- Oil for your wok
Method
- Heat the oil in the wok and quickly stir-fry the prawns until pink on one side and quickly turn until this side goes pink. Maybe 2 minutes altogether and remove the prawns.
- Add the Valcom Green Curry paste to the wok and stir-fry for 30 seconds until aromatic. Add the coconut cream, fish sauce, brown sugar, lime juice and cherry tomatoes
- Stir-fry for 2-3 minutes until the tomatoes just collapse.At this stage you can add coriander (I didn't use in my recipe)
- Add the cooked prawns and warm through.
- Serve with a Jasmine rice and optional lime cheek.
