Ingredients
- 1 - 2 cups Obento Panko Bread Crumbs
- 3 cooked hotdogs cut in half or cooked sausage of choice
- Small packet of sliced mozzarella cheese or block
- 1 - 2 potatoes peeled & sliced into thin French fry chips, and chopped into little cubes (optional)
- 1 tbs corn flour if using potatoes
- 1 3/4 cup plain flour
- 7g sachet or 1 tsp of active dry yeast
- 1 tbs white sugar + extra to sprinkle on top of hotdogs
- Generous pinch of salt
- 1 cup warm water
- Oil for frying
- Thick sturdy wooden skewers or disposable wooden chopsticks
- Tomato sauce for drizzling
- Mustard for drizzling
Method
- PREPARE BATTER:
- Combine 1 cup of warm water with yeast and sugar and set aside until foamy (5 - 10 minutes)
- Combine flour, salt and yeast mixture, cover and set aside to double in size, chill in fridge
- PREPARE POTATOES:
- Place cubed potatoes in boiling water for 1 1/2 minutes, drain and place in ice cold water, dry, chill in fridge
- ASSEMBLING:
- Add cornflour to potato cubes and combine until all pieces are coated, this will help them stick to the hotdog and make them extra crunchy.
- 1. Skewer sausage and wrap mozzarella cheese around or 2. Just skewer sausage or 3. Add cubed sausage and cheese alternatively or 4. Just add cheese
- Now for the messy fun part. Dip hotdogs into batter, with a circular twisting motion wrap batter around hotdog (batter should be soft and stringy) until all covered, using wet hands you may need to give it a help, then roll & cover with panko bread crumbs, it does not have to be nice and neat
- If using potato, roll and press pieces into batter before covering with panko breadcrumbs
- Place hotdogs into freezer to partially freeze (1 hour approximately). This will help in moulding your hotdogs into shape and keeping your cheese from oozing out whilst frying
- Heat oil to 190 Celsius, mould your hotdogs into a nice shape. Cook 1 - 2 hotdogs at a time for 3 - 5 minutes until nice and golden brown, liberally sprinkle with sugar and drizzle with tomato sauce and mustard
- TIPS:
- 1. Don't skip the sugar 2. Use ready made French fries from the supermarket instead 3. Try using fish cakes 4. Make sure your ingredients are cold, best prepared the day before 5. Add chilli sauce for an extra SOUL SPICY KICK
