Ingredients
- Green bananas prawns 700 gm
- Sunflower oil for frying
- Egg
- Flour
- Panko bread crumbs
- Seasoning
- Seasonal salad ingredients
- Kewpie mayonnaise with peri peri sauce
- Lemon wedges to garnish
Method
- Peel and devein prawns
- Put into separate bowls 2 tbs plain flower, 1 egg mixed with 2 tbs water and 1 cup Panko bread crumbs
- Dip prawns firstly into flour, then into egg then into bread crumbs. Place in fridge for 30 minutes
- Heat sunflower oil in wok or saucepan Test for temperature by putting pinch of panko breadcrumbs bubble in oil. Add prawns 2-3 at a time till golden brown and place on paper towel.
- Arrange salad around the perimeter of the plate and stack prawns in the middle
- Mix up kewpie mayonnaise and perri peri sauce to your taste and place in a small bowl
- Dip prawns into sauce and enjoy.
