Ingredients
- 1 serving Hakubaku organic soba noodles
- 1 tbsp duck fat (most delicious if rendered yourself with skin-on duck breast, but store bought is fine)
- Soy sauce to taste
- 1 egg
- Fresh or pickled vegetables (e.g., sliced cucumber; photo shows pickled cabbage)
- 1 stalk spring onion, sliced
Method
- Cook the soba noodles according to packet instructions.
- Transfer directly into a bowl and mix in the duck fat and soy sauce (start with 1/2 tbsp and add more as needed) to taste
- Poach the egg and lay on top of the noodles
- Top with the vegetables and garnish with spring onion
