
Ingredients
- 1 Tsp olive oil
- 1 large white onion diced
- 3 garlic cloves minced
- 1 tsp ginger paste
- 3 heaped tbsp Valcom Panaeng Curry paste
- 500g pork loin chops
- 1 red capsicum
- 1 brocolli head
- 500g pumpkin (or sweet potato)
- 1 carrot
- 1 lime
- 1 tsp fish sauce
- 1 can Coconut cream or milk
Method
- Heat oil in large pot and add diced onion, garlic and ginger paste and fry until onion is soft and translucent. Add Capsicum and lightly Sautee.
- Cut fat from pork and In a separate pan, lightly fry until crispy, put aside for garnishing the dish. Add diced pork meat to same pan and sear all sides. Once all sides of the pork is seared, remove from pan and put aside.
- While the pork is searing, add Valcom Panaeng Curry paste and fry for 1 - 2 mins. Add coconut milk and bring to a simmer.
- Chop brocolli, pumpkin, beans and carrot (and/or any other vegetables of choice) and add to pot. Simmer all veges until they are starting to soften but not cooked through - if unsure, stab pumpkin with a fork. You want it to stab in but still be firm.Add pork and simmer for a further 2-3 mins on low until all meat and vege is cooked through.
- Lastly add fish sauce and juice from a lime and stir. Serve with fresh warm rice and garnish with crispy pork skin pieces.
