Ingredients
- Edamame beans, red cabbage, quinoa, baby spinach, spring onions
- Rice wine vinegar, soy sauce, maple syrup, peanut butter, ginger, cayenne pepper
- Cashews
Method
- Cook quinoa and cool, Slice all salad ingredients , shell edamame beans and toss all together with baby spinach.
- To make the dressing combine all ingredients add 2 tablespoons hot water and whisk until thick.
- Serve and devour. Delicious and much loved salad.
