
Ingredients
- 1/2 a jar of green curry paste
- 500g of chicken
- 1 Broccoli or any other veggie
- 400g of coconut milk
- 1tbsp vegetable oil
- 1tbsp fish sauce
- 1tsp of sugar
Method
- Stir fry the coconut paste with 2tbsp of oil over medium heat
- Add half of the 400ml coconut milk and stir fry until the sauce thickens and oil appears
- Add the chicken and broccoli and cook over high heat for 2min. Add the remaining coconut milk, 1tbsp of fish sauce and 1tbsp of sugar and bring to the boil. Cook until chicken is fully cooked and broccoli is tender.
