Ingredients
- 2tbs Olive oil
- 1 brown onion diced
- 4 rashes bacon
- 1Red capsicum diced
- 4 eggs
- 200g bag baby spinach
- 1 carrot diced
- 1 zucchini diced
- 1 cup frozen peas and corn
- 1 tsp crushed garlic
- 1/4 cup Lee Kum Kee Premium Soy Sauce
- Pinch salt
- Ground black pepper to taste
- 1/2 roast chicken shredded
- 2 packets microwave white rice
Method
- Place olive oil in medium heated heavy based pan. Add crushed garlic and onion. STIR. Add chopped bacon. Stir until brown.
- Add carrot, zucchini, capsicum, frozen peas and corn and baby spinach. Stir over heat until soft.
- Meanwhile heat pan and cook egg over medium heat-high heat. Scramble until cooked.Add to other ingredients. Add roast chicken. Salt and pepper.
- Cook microwave rice following packet instructions. Stir through meat and veg mix.
- Add Lee kum kee premium soy sauce. Stir.Serve and enjoy!
