Ingredients
- 270g Dry Udon Noodles
- 2 Tabs Canola Oil
- 1 Red Capsicum
- 1 Cup Broccolini
- 1 Cup Sliced Snow Peas
- 1 Sliced Onion
- 2 Cloves crushed garlic
- 500 grams Pork Mince
- Coriander (for garnish)
- 3 tabs Oyster Sauce
- 2 tabs kecap Manis
- 1 tab Soy Sauce
Method
- Make up sauce with oyster sauce, kecap manis and soy sauce in a small bowl.
- Cook udon noodles as per cooking instructions on packet minus 2 minutes. Drain and set aside.
- Heat oil in wok and add vegetables (except onion) and stir fry until lightly cooked. Remove and set aside.
- Heat oil and add onion with garlic and stir fry being careful not to burn. Add pork mince and break up. Once lightly browned add the sauce and vegetables back into the wok. Stir fry until cooked through.
- Serve in a bowl on top of the udon noodles and garnish with coriander. Enjoy!
