Ingredients
- Carrots ×3
- Potatoes ×3
- Onion ×2
- Chicken thighs × 500g
- Golden Curry - mild 92g
Method
- Cut up potatoes, carrots, onion and chicken into bite sizes.
- Cook the chicken first in a pot until almost cooked through, then add onion, carrots and potatoes.
- Stir the chicken and vegetables on high heat for about 5 mins
- Then add enough water to cover everything in the pot.
- Simmer on low to medium heat for about 15 minutes. In this time cook 2 cups of rice in the rice cooker.
- Check the carrots and potatoes have soften. If not continue to simmer until soften.
- Turn the heat off. Broke the curry cubes into the pot. Continue stirring until all cubes are dissolved.
- Serve up with rice! :)
