Ingredients
- 1 pack Gnocchi
- 1 tbsp Olive Oil
- 1 small bunch Broccolini
- 1 small handful Green beans
- 1 medium Zucchini
- 1 medium handful Frozen Peas
- ABC Sweet Soy Sauce (Kecap Manis)
- Fresh chopped Parsley
- Fresh grated Parmesan Cheese (optional - remove to make vegan)
- Salt & Pepper to taste
- 1 Clove Garlic (crushed)
Method
- Air-fry or pan-fry Gnocchi until golden and crispy, set aside for later
- Add 1 tbsp Olive Oil to pan and gently fry off crushed garlic
- Slice Zucchini, trim and prepare Broccolini and Green Beans, then add to pan and cook until vegetables are just tender but still have a bit of crunch
- While vegetables are cooking, run frozen peas under warm water to slightly defrost then add to pan with other greens
- Once all vegetables are cooked through, add crispy Gnocchi back to the pan and stir everything to combine
- Take pan off the heat, then drizzle over ABC Sweet Soy Sauce (Kecap Manis) and stir through (add as much as or as little as you like - taste as you go)
- Stir through chopped fresh Parsely and season with salt and pepper
- Grate fresh Parmesan over the dish and you're done (skip this step to keep the dish vegan)
