Ingredients
- 750 grams diced chicken breast
- 1 broccoli
- 1 red capsicum
- 1 green capsicum
- 800 ml coconut milk
- 2 x carrots
- 1 table spoon olive oil
Method
- Heat the green curry paste and oil until fragrant
- Add 400ml of coconut milk and cook on medium heat for 3 minutes
- Add chicken and cook for 2 minutes
- Add remaining coconut milk, carrots and capsicum and bring to a boil
- Add broccoli and cook for 2 minutes
