Ingredients
- 4 zucchinis
- 1/4 cup Valcom Thai Green Curry Paste
- 2 tbsp brown sugar
- 2 tbsp desiccated coconut
- Spray oil
- Steamed rice to serve
Method
- Slice zucchinis in half, then each half into quarters lengthwise.
- Combine in a bowl the Valcom Thai Green Curry Paste, brown sugar, desiccated coconut and 1 tbsp of water.
- Coat zucchini wedges in curry mixture and place on lined baking tray.
- Spray with a little oil and bake in 200°C oven for 25 minutes.
- Serve zucchini wedges with steamed rice.
