Ingredients
- Ingredients for Grilled Beef Ribs:
- 2 kg Beef Ribs
- Oil to fry the paste
- Water to boil the ribs
- Spice Paste: 10 cloves of garlic5 shallots or 1 medium sized red onion5 candlenuts, toasted on a dry pan first with no oil 1 thumb size of ginger, or can use 1 teaspoon ground ginger1 thumb size of turmeric or can use 1 teaspoon of ground turmeric1 1/2 teaspoon coriander seed1/2 teaspoon grated nutmegSalt, pepper and sugar for taste
- Spices to put into the ribs when cooking: 2 lemongrass, smashed2 bay leaves, either fresh or dried4 kaffir lime leaves, either fresh or frozen5 tablespoon of ABC Sweet soy sauce
- Ingredients for Tempe Mendoan:400g or 1 packet of original tempeh, cut into slices (I cut mine into 12 slices)Oil for deep frying
- Batter for the Tempeh Mendoan: 125 gram all purpose flour1 tablespoon rice flour1 teaspoon salt1 teaspoon sugar1 teaspoon ground coriander2 cloves of garlic, grated2 spring onions, sliced200ml water
- Indonesian style Corn Fritter:3 corn cobs,2 stalks of spring onion, sliced2 or 3 fresh kaffir lime leaves (optional)350 gram plain flour100 gram rice flour2 teaspoon baking powder100-150 ml waterSalt pepper to tasteCanola/Rice Bran Oil to shallow fry.
- Note: With the ABC Extra Hot Chilli Sauce, I did not buy during the promotion period as this is already in my pantry, therefore I am unable to provide receipt
Method
- Making the Spice Paste for Beef Ribs:Pound all of the ingredients using a mortar and pestle or using a food processor until they become a paste.
- Heat say few tablespoon oil in a big pot, and cook the spice paste. Add the smashed lemongrass, bay leaves and kaffir lime leaves.
- Clean the beef ribs with water and add them into the pot where spice paste is cooking.
- Add water into the pot until all ribs are merged under water. Add more salt pepper, if needed.Add the ABC Sweet soy sauce too.
- Boil or cook the ribs until they are well cooked and soft, still holding onto the bones. Taste the soup and see if they need adjustment of salt, pepper and or ABC sweet soy sauce. Once the ribs are cooked, you can then leave them to cool or put them straight on to your grill pan or into the oven under grill mode. Whilst grilling, you can baste the ribs using the leftover spice soup from earlier. Serve hot with rice and ABC Extra Hot Chili sauce
- How to make Tempeh mendoan- Heat enough oil in a pot/frying pan for deep frying.- Combine all batter ingredients in a mixing bowl, make sure to remove all the lumps.- Once the oil is ready, dip each slice of tempeh in the batter and deep fry until crispy. - Serve with ABC Extra Hot Chilli sauce
- How to make Indonesian Style Corn FrittersFirst, slice the corn kernels off the cob into a bowl.Slice the spring onions thinly and add to the corn mix.Take the stalk out of kaffir lime leaves and slice very thinly, add to the corn mix.Add the plain flour, rice flour and baking powder into the mix. Combine the mix thoroughly.Add ground coriander, salt pepper to tasteAdd the water slowly into the mixture, until the corn mixture has a batter/pancake consistency, not to thick or too thin. Adjust adding the water accordingly.In the meantime, preheat the oil in the pan over medium heat.Spoon batter into the pan using a spoon, forming fritters by spreading the mixture out slightly with the back of your spoon.Fit as many as you can into the pan and cook for about 2 minutes each side or until golden brown. Transfer to a plate and keep warm while you cook the rest of the fritters.Enjoy the fritters whilst warm as snack or as side dish dipped into ABC Extra Hot Chilli sauce.
