Ingredients
- Beef strips 500g
- Olive oil 1 Tbsp
- Corn starch 1 Tbsp
- Soy sauce 1 Tbsp
- Oyster sauce 1 Tbsp
- White pepper 1 tsp
- Small tin of pineapple in juice diced (reserve juice for marinade’)
- Small tin of Valcom bamboo shoots - sliced
- Celery 3 stalks sliced
- Brown onion 2 sliced
- Iceberg lettuce prepared in cups
- Chilli flakes Optional
- Sesame seeds - optional
- Lime - optional
- Tomato and cucumber - optional
Method
- Marinade beef strips with all sauces including pineapple water and corn starch . Set a side while cutting up vegetables
- Heat olive oil in pan and add beef mixture and stir for few minutes and add vegetables. Stir till cook through. Once cooked to your desired add diced pineapple and quick stir through to finish.
- Place your stir fry in lettuce cup and dressed with tomato, cucumber, chili flakes, sesame seeds and a edge of lime. Serve with rice if you wish instead of lettuce cup but for this, this is a low carb inspired.
