Ingredients
- 1/2 jar of Valcom Red Curry Paste
- 300g chicken thighs
- 1/2 head of cauliflower
- 1 medium zucchini
- 1/2 bulb of fresh garlic
- 2 shallots
- 1 tin of coconut cream
- Avocado oil
- Salt + pepper
- 2 cups steamed basmati rice
Method
- In a medium oiled pan, brown the chicken thighs and season before setting aside.
- In the same pan, combine the fresh garlic and diced shallots. Sauté until the shallots are translucent.
- Then add the browned chicken, cauliflower and sliced zucchini back into the pan with the Valcom Red Curry Paste.
- Toss through on a medium heat until combined, and simmer for approx. 5 mins.
- Next, add the coconut cream and stir through. Let this simmer for 10mins with the lid on, and a further 20 with the lid removed on a low heat.
- Serve with steamed basmati rice + enjoy!
