- Ingredients:- 1 cup sushi rice - 1 tablespoon rice vinegar - 1 tablespoon sugar - 4 tablespoons sushi seasoning - 4 chicken schnitzels - 1 cucumber - Honey (for glazing) - Kewpie mayo - Sushi nori sheets (seaweed) - Soy sauce and pickled ginger (for serving) Instructions:Step 1: Cook the Rice 1. Boil the sushi rice according to package instructions. 2. Once cooked, let it cool down to a warm temperature (not hot). Step 2: Season the Rice3. Add 1 tablespoon of rice vinegar, 1 tablespoon of sugar, and 4 tablespoons of sushi seasoning to the warm rice. 4. Stir well to evenly coat the rice. 5. Let it sit until it has completely cooled down. Step 3: Prepare the Chicken Schnitzel 6. While the rice is cooling, cook the 4 chicken schnitzels as per instructions (pan-fry or oven-bake). 7. Let the schnitzels cool down. 8. Lightly butter one side of each schnitzel with honey. 9. Slice each schnitzel into thin strips. Step 4: Prepare the Cucumber 10. Slice the cucumber into thin strips, removing the seeds. Step 5: Assemble the Sushi Rolls11. Place a sushi nori sheet on a clean surface, shiny side down. 12. Spread about 2 tablespoons of seasoned rice along one side of the sushi sheet. 13. Place two strips of schnitzel on top of the rice. 14. Add one strip of cucumber. 15. Drizzle a small amount of Kewpie mayo over the filling. 16. Carefully roll up the sushi sheet tightly, using your hands or a bamboo sushi mat. Step 6: Serve17. Let the sushi rolls cool down for a few minutes. 18. Slice into bite-sized pieces using a sharp knife. 19. Serve with soy sauce and pickled ginger on the side.
