Ingredients
- Chicken breast
- Soy Sauce
- Honey
- Ginger
- Broccolini
- Spring Onion
- Capsicum
- Crispy Shallots
- Coriander
- Salt & Pepper
- Rice
- Peanut Oil
- Carrot
Method
- Slice chicken breast into thin strips, marinate with 3-tbl spoons Lee Kum Kee soy sauce, 1-tablespoon fish sauce, 2-tbl spoon honey, 2-tbl spoons peanut oil and grated fresh ginger (as little or as much as you like!). Leave in refrigerator for 1-2 hours to marinate well.
- Prep and slice onion, broccolini, capsicum and carrot.
- Next, place some peanut oil in a wok over high heat. (*Tip - the key to an authentic tasting stir fry is to make sure your wok is very hot!). Add the broccolini, capsicum and carrot to the wok and cook few minutes until just tender. Remove and set them aside on a plate. Next, pour a little more oil into the wok and add the marinated chicken, spring onion, salt and pepper. Cook the chicken through.
- Return the vegetables to the wok. Make some more honey soy sauce by whisking together some Lee Kum Kee soy sauce, honey and cornstarch. Pour the sauce over the chicken and vegetables. Simmer for a few minutes then add some fresh chopped coriander and crispy shallots on top! Serve with rice. 唔該晒!!!
