
Ingredients
- 1kg of potatoes
- 3 carrots
- 1 onion
- 2 cups of peas
- 1 box of s&b golden curry - medium hot
- 1 litre of water
- 400g of firm tofu
Method
- Fry off onion in a large cast iron pot until translucent for approx. mins
- Add water and bring to the boil
- Add the s&b golden curry into the water and simmer until dissolved
- Add all your vegetables and simmer for 25 minutes or until potatoes are tender stirring every 5 minutes
- Cut the tofu into a large pan and add into a frypan and shallow fry until golden and crisp
