
Ingredients
- 2 x potatoes
- 1/2 onion (diced)
- Fresh parsley (finely chopped)
- Kewpie mayonnaise
- Dijon mustard
Method
- Cut the potatoes into bite-sized cubes.
- Place the potatoes in a pot of water, bring to a boil, and cook for 10-12 minutes.
- While the potatoes are boiling, dice the onion. To reduce its raw taste, place the diced onion in a bowl of water and set aside.
- Finely chop the parsley and set it aside.
- To make the dressing, in a small bowl, mix the Kewpie mayonnaise and Dijon mustard. The recommended ratio is 1 part mustard to 4 parts mayonnaise, or adjust according to your taste.
- Once the potatoes are cooked, drain the water and add the onion (drained out the water), the parsley, and the mayo-mustard dressing. Gently mix until everything is well coated.
- Taste and adjust seasoning if needed, then serve.
