Ingredients
- 2 potatoes
- 1 large carrot
- 1 brown onion
- 1 Tbsp chopped Ginger
- Cooked basmati rice
- Cooked crumbed chicken breasts x4
- Golden curry mix (1 pack)
- 3 cups water
- Tbsp olive oil
Method
- Chop onion, carrots, potatoes, ginger
- Cook onion and ginger in oil until brown
- Add in carrots and potatoes and sauté for a few mins
- Add 3 cups of water to the pan and bring to boil, once boiling, turn heat on low and cover. Cook for 15 mins
- While that’s cooking, place crumbed chicken into oven and cook for 15 mins
- Turn heat off, then add golden curry cubes. Stir till all combined and thickens
- Serve with rice and chicken.
