Ingredients
- 500g chicken mince
- 1 T olive oil
- 92g S&B golden curry mix mild
- 1 bunch pak choy, halved lengthways
- 2C cooked rice
- 4 free range eggs
Method
- Heat oil in pan over medium heat. Add chicken mince and cook, stirring for 7 minutes or until chicken is cooked.
- Add curry mix and 2C water and stir to combine. Cook for 3 mins or until curry is simmering and thickened.
- Meanwhile, cook pak choy by submerging in simmering water for 1 min.
- Also, fry eggs to your liking
- Place rice in four bowls, divide curry mince between bowls, top with pak choy and eggs. Serve and enjoy
