Ingredients
- 2 crumbed chicken breast
- Vegetable's of your choice (zucchini, pumpkin, onion, cauliflower, potato
- 1/2 packet of golden curry paste
- Steamed rice
- Garnish, vegetable strips, herbs etc
Method
- sweat the vegetables in a pan with some oil, add 1/2 packet of golden curry and water to cover, Stir the set on a low simmer until the vegetables are tender.
- Meanwhile, crumb the chicken breasts (flour, egg and panko crumbs) then fry them gently in oil until golden brown.Cut the chicken into fingers
- To Serve:Mold some steamed rice in a tea cup and tip it onto a plateSpoon some of the vegetable curry alongside the rice.Mound the chicken on the plate and garnish with herbs etc
