Ingredients
- OBAP sweet potato noodles
- 1 block firm tofu
- 5 tbsp vegetable stock
- Julienned veggies: carrot, red capsicum, green capsicum, shittake mushroom, red cabbage, red onion
- Minced garlic
- Light soy sauce
- Sesame oil
- Maple syrup
- Rice wine vinegar

Method
- The first step is to julienne all the veggies. I had to google that term so I’ll tell you, it’s chopping the veggies super skinny and little.
- After pressing the tofu, and chopping it up into more skinny legends. Put in air fryer for 15-20 minutes with some olive oil salt pepper.
- With a few tbsp of veggie stock, sautee them veggies for 5 minutes so they stay nice and crunchy!
- As followed on the OBAP packet, pop the sweet potato glass noodles in boiling water for 8 minutes. Save a cup of the cooked water. After cooked run under cold water.
- Make a sauce out of the sesame oil, soy sauce, maple syrup and rice wine vinegar. You may notice I did not specify and measurements… that because I cook with spontaneity and love. Pour to taste.
- Mix it all together!!!!! One bowl of love coming right up.
