Ingredients
- 300g beef strips
- 1/3 cup soy sauce
- 4tsp sugar
- 3tsp minced garlic
- 1.5tbsp sesame oil
- 1tsp salt
- 1tsp pepper
- 1 packet Obap sweet potato noodles (100g)
- 4tbsp neutral cooking oil
- 1 brown onion, sliced
- 3 spring onions, sliced and separated into whites and greens
- 200g fresh shiitake mushrooms, sliced (can also use 50g dried and soaked in water for 30mins then drained)
- 1 red capsicum, sliced
- 2 carrots, sliced
- 4 cups fresh spinach leaves
- 2 tbsp sesame seeds
Method
- Mix 2tsp soy sauce, 2tsp sugar, 2tsp minced garlic and pinch black pepper in a bowl. Add beef strips and marinate until ready to use (15mins)
- Cook sweet potato noodles according to packet directions, usually in boiling water for 8mins. Rinse in cold water and drain when done
- Add remaining soy sauce, sugar, garlic, sesame oil, salt and pepper into a large bowl and mix. Add cooked noodles once done (don’t mix)
- Heat oil in a large frypan or chef’s pan. Sauté onion, white parts of spring onion and shiitake mushrooms together with a pinch of salt for 2-3mins. Add on top of noodles (don’t mix)
- In the same pan, sauté carrot and capsicum for 2-3mins. Add green part of spring onions plus spinach leaves. Sauté for a further 1min then add to noodles (don’t mix)
- Add beef plus marinade juices to the pan. Sauté until just cooked. Add on top of noodles
- Mix all ingredients together. Serve in a bowl topped with sesame seeds for garnish
