
Ingredients
- Valcom Red Curry Paste 2 tbsp
- Valcom Yellow Curry Paste 1 tbsp
- Coconut Milk 150 ml
- Water 200 ml
- Pork Belly (or any protein you prefer) 200 grams
- Hakubaku Organic Soba 90 grams
- Pickle Mustard Greens 1 grams (1 little can)
- Shredded Carrot and Cabbage 100 grams
- Crunchy Fried Noodles 40 grams
- Spring Onion just for sprinkle on top
Method
- In a medium hot pan put in both curries paste and stir until you can smell the paste.
- Put heat to high and add pork (protein), stir until almost cooked.
- Add coconut milk (leave 2 tbsp for after) and add water at the same time leave it to boil.
- In another pot boil water for cooking soba noodles, please follow the instruction on soba package.
- Once soba cooked, drain water out and put soba into a serving bowl.
- Leave the curry broth to cook for around 15-20 mins, then turn off the heat.
- Add fish sauce if needed, I didn’t add any as curry paste was very flavorful already.
- Pour curry broth into your bowl with pork(protein) then add veg, crunchy fried noodles, pickle mustard greens, spring onion and the 1 tbsp of coconut milk. And enjoy!
