
Ingredients
- 3 cloves garlic
- Heaped teaspoon ginger
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- Chicken thigh - cubed
- Corn flour to coat
- 1 cup Sushi rice
- Cucumber
- Tomato
- Lettuce/ spinach
- Kewpie mayo and sriracha mayo
- Kewpi Japanese dressing sesame
- Sweet soy sauce - kecap manis
- Oil for frying
Method
- Cube chicken thigh and marinade in chopped garlic, ginger, soy sauce and rice vinegar. Longer time to marinate the better.
- Add rice and water to pot or rice cooker to begin cooking.Coat chicken in corn flour and shallow fry till golden brown.
- Chop tomato and cucumber. Add lettuce to a plate and top with the salad items. Drizzle with kewpie Japanese sesame dressing.
- Add cooked sushi rice to plate and top with cooked chicken. Then drizzle the kecap manis, the kewpie mayo and the kewpie sriracha mayo.
