Ingredients
- 700g Chicken thigh fillets
- 2 Bunches of Broccolini
- 1 Pack of Frozen Edamame beans
- 2 Carrots
- 1 Cucumber
- 4 Large Eggs
- 1 Red onion
- 1 tsp of sugar
- 3 Seaweed sheets
- 2 Cups of sushi rice
- Light Soy Sauce
- Mirin
- Rice Vinegar
- Sea Salt to taste
- Roasted Sesame Seeds
- Teriyaki Sauce
- Lots and lots of Kewpie Mayo
- Pickled ginger
- Green onion
Method
- Prep
- Mix teriyaki sauce with the chicken until all pieces are evenly coated. Let it marinate overnight inside a sealed container in the fridge.
- Pan-fry the teriyaki-soaked chicken for about 10 minutes each side or until it’s as golden as a summer tan.
- Roast Broccolini in the oven at 400°F (200°C) for about 10-12 minutes, or until the edges are crispy.
- Steam the frozen edamame for about 5 minutes, until they're bright green.
- Peel and thinly slice the carrots.
- Dice the cucumber in chunky pieces and mix it with roasted sesame and a drizzle of mirin.
- Boil eggs for 6 minutes for that runny yolk goodness, then marinate them in the soy-mirin mix for at least 10 minutes.
- Thinly slice the onion and let them mingle in vinegar and a pinch of salt for about 5-10 minutes until they get soft.
- Cook the rice as per the instructions in the packet. We recommend using a rice cooker.
- Cut up the seaweed sheets in long, thin strips. Optional step: we like to put them in the oven with the broccolini for 2-3 minutes, as it makes them even crispier.
- Assembly
- Start with the rice, lay down the fluffy foundation.
- Cut the chicken in cubes and nest them in one the corners of your bowl.
- Place those crispy broccolini and carrot slices like you’re building a delicious log cabin.
- Add cucumber and a generous helping of edamame for green goodness.
- Nestle in your soft-boiled, marinated eggs like precious pearls. We like to cut ours in half before serving for the jelly like yolk to add some colour and texture to your masterpiece bowl
- Crown with the tangy pickled onions and ginger for a burst of colour and flavour
- Final flourish - artistically drizzle lots of Kewpie mayo and scatter seaweed strips and thinly sliced green onions over the top.
