Ingredients
- 4 pieces of chicken drumsticks
- 400 gms fresh egg noodles
- 1/2 jar Valcom Thai Curry Noodle paste
- 600mls Valcom Coconut milk, 1 1/2 cups water
- 1 tbsp light soya sauce,
- 1 tsp salt
- 2 tsp sugar
- Ingredients for garnish, 1 lemon cut into quarters, 1/2 red onion, 1 chilli & coriander
Method
- Deep fried 100gms of fresh egg noodles till crispy for garnish.
- Cook the rest of the noodles in boiling water till cook, drain & put into the 4 bowls
- Cook 600 mls of coconut milk and 1/2 jar of Valcom Thai Curry Noodle, 1 1/2 cup water in medium heat. Simmer till chicken is cooked about 20 mins
- Add salt & sugar
- Add curry sauce & chicken to the bowls of noodles
- Garnish with crispy noodles, red onion, coriander, chilli & lemon.Squeeze juice of lemon to enhance flavours
- Enjoy this one bowl creamy chicken curry noodle soup, rich & full of flavours.
