
Ingredients
- 1x 200g tin of Obap Kimchi
- 4-8 Obento Yaki Nori sheets
- Kewpie Mayonnaise (your choice of flavour)
- 1 tablespoon of Obento Sushi Seasoning dressing
- 1/2 - 1 tablespoon of Lee Kum Kee Sesame Oil
- Spring onion, sliced (to liking)
- 1 cup of thinly sliced cabbage
- 1/2 a lettuce (your choice of type)
- 1 Carrot thinly sliced (julienne)
- 1 cup of medium grain rice (Obento Sushi Rice works best)
- 1 egg
- 1/2 of grated cheese (cheddar or mozzarella)
- Salt and pepper to taste
- Cooking oil (personal choice)
Method
- Cook your rice.**TIP: you can freeze spare rice. If you have some frozen it still works for this recipe, just make sure it is wrapped and reheat it in the microwave.
- Place warm rice into a bowl with the Obento sushi seasoning. Mix the two ingredients and set this aside.
- Separate your choice of lettuce leaves, wash and dry. Spin dry, pat with hand towel or shake in a teatowel; just make sure it is nice and dry.**TIP: use cold water if you want your lettuce to stay crisp.
- Place the sliced cabbage, carrot, spring onion, 150g of Obap kimchi and the cheese into a large bowl, making sure the ingredients are mixed.
- Add the egg, Lee Kum Kee sesame oil and preferred amount of salt and pepper. **TIP: the kimchi will add some spice and salt helps bring out its flavour. Mix all ingredients.
- Oil a pan to cook the mixture as a 10-12cm pancake. Leave for a few minutes/brown on the bottom and flip to cook both sides. Then set aside. **TIP: if you are worried about flipping this pancake, you can cook smaller 5-6cm batches, or, quater the pancake before you attempt to flip it.
- Place the Obento Nori sheet on a bench/board. Cut a vertical line from the bottom centre to the very middle. This allows you to fold the Nori into a square. **TIP: if you love Obento Nori like my son does, double layer the Nori (this also makes for a crispier sanga!)
- Time to fill! Leave the bottom left quadrant empty. Add 1/4 of your pancake to the top left quadrant. Add a layer of rice matching the thickness of the pancake to your top right quadrant.Add some lettuce leaves to the bottom right quadrant.
- Squeeze your preferred amount of Kewpie onto the pancake before folding. **TIP: for those who like to spicy, Kewpie has wasabi flavoured Mayonnaise too!
- Fold the bottom left up, on top of the pancake. Fold the top left across to the right, on top of the rice.Fold the top down, on top of the lettuce.
- My son LOVES Obap kimchi and Kewpi, so we always serve extra to add as toppings to his bites, on the side. Enjoy!
