Ingredients
- 1 can Obap Kimchi
- 12 fresh Scallops
- 1kg potato's
- 1 red onion minced
- 1 tbls chilli sauce
- 1/4 cup heavy cream
- Oil for frying
- 1tbls brown sugar
- Coriander for presentation.
Method
- Peel and cook potato's .
- Mash potato's with heavy cream until puree.
- Add kimchi and chilli sauce to potato puree. Set aside
- Heat oil in heavy pan add sugar,stir until dissolved and turns golden.
- Cook scallops in oil mixture until golden. Approx. 1 1/2 minutes each side.
- To serve, scoop 1 dessert spoon potato mixture onto scallop shell or small side dish. place scallop on top of potato.
- place minced red onion on side dish and decorate with coriander.
