
Ingredients
- 3 Moreton Bay Bugs
- 3/4 cup of Kewpie Mayonnaise
- 100g Obento Tempura batter
- 170g of soda water
- 100ml full cream milk
- 1 cup of cooked rice / alternatively pre purchased heat and serve rice
- Yaki nori seaweed sheets 3 - 8 x 8 cm cut into squares
- Shallot/ spring onion
- Kaffir lime leaves
- Long red chilli
- 1/4 cup of pickled ginger
- 1tsp Wasabi paste
Method
- INSTRUCTIONS:Gather all ingredients required to ensure a quick fast & fab recipe can be achieved in 20 minutes!
- 1. In a bowl, whisk the milk and 1/4 tsp of wasabi paste together, to a smooth consistency – Place the Moreton Bay Bug meat in the bowl. Allow it to rest (whilst preparing the batter).2. Meanwhile, place enough vegetable oil in wok heating to 175°C.3. In another bowl, whisk together the tempura batter, and soda water to lightly combine.*Check the temperature of the heated oil by testing with a drizzle of batter on a fork. Oil is ready when it bubbles to the surface.4. Dip the Moreton Bay bug meat (from the milk bath) in the batter, transfer to heated wok and COOK for 2- 4 mins depending on size of bug meat. 6. Transfer cooked bugs to a plate lined with paper towel to soak up the excess oil.
- DIPPING SAUCE:1/4 cup Kewpie Mayonnaise1/4 tsp Wasabi PastePlace the combined ingredients in a piping bag. Place in fridge till ready to use. Decorate the Moreton Bay bugs once cooked. Present excess sauce dollops on plate.
- Create 3 rice bowls on the plate. Top each shape with 3 prepared square sheets of seaweed. Place a Moreton Bay Bug on each and top with wasabi mayonnaise dipping sauce, shallots and black sesame seeds. Decorate plate with stick pickled ginger, wasabi paste and extra wasabi mayonnaise. In the centre place a long red chilli and kaffir lime leaves to decorate.
- NOTES:If cooking rice, start first before preparing the Moreton Bay bugs. This will add extra time to your overall cooking time.For the Fast & Fab use precooked rice you can have you dish on the table well within 20 mins!Alternatively use precooked rice (several varieties available). Create your own rice bowls by adding cooked rice into the bowl moulds- microwave for 20 seconds, then place upside down on plate to create a mound. This forms the design for your dish!
- BASIC RICE RECIPE: 3 serves1 cup of long or medium grain rice (sushi rice, jasmine)1⅓ cup of water METHOD:1. Rinse rice till it runs clear to remove any starch.2. Combine the water and rice in a pot.3. Bring to the boil over a medium heat. As soon as constant bubbles appear it will be at boiling point.4. Stir the rice with a wooden spoon or spatula, making sure to scrap up the grains at the bottom of the pot. Cover with a lid and turn the heat to low.5. Cook rice for 15 minutes, check and if it requires more add approximately 5 more mins.6. Turn off heat and let sit for 5-10 mins before serving.Total time: 20 minutes
