Ingredients
- Obap sweet potato noodles
- 1 carrot
- 1 bunch pak choy
- 200 grams shiitake mushrooms sliced in half
- 200 grams pre-sliced white mushrooms
- Half red capsicum sliced
- 1/4 onion sliced
- 1 clove garlic minced
- Knob of ginger sliced
- 1 tablespoon olive oil
- 1 tsp sesame oil
- 1 tablespoon soy sauce (any but not dark)
- I tablespoon oyster sauce
- Dollop of honey
- Salt & pepper to taste
Method
- Cook Obap sweet potato noodles per packet instructions
- Wash pak choy then slice each stem half lengthwise
- Peel carrot then slice oval shape the half lengthwise
- Slice capsicum
- Slice onion
- Mince garlic and ginger
- Blanch pak choy, carrots, capsicum in boiling water then transfer to ice water bowl
- Stir fry mushrooms with ginger, garlic, onion in olive oil until mushrooms brown in a wok
- Add cooked sweet potato noodles
- Add soy sauce and oyster sauce
- Add carrots into wok followed by pak choy then capsicum last
- Add sesame oil
- Add honey followed by salt & pepper to taste
