Ingredients
- Jumbo prawns
- Red onion
- Red capsicum
- Garlic
- Coconut milk
- Laksa paste
- Chicken stock
- Egg noodles
- Chilli
- Coriander
- Bean sprouts
- Lime
Method
- Heat oil in pan, cook onion and capsicum until soft, add garlic, chilli and laksa paste
- Cook for roughly 4 minutes until fragrant
- Add stock, coconut milk and prawns and simmer uncovered for 10 minutes
- Add egg noodles, cook for 3 minutes
- Add lime juice and stir through
- Serve and top with bean sprouts and coriander
