Ingredients
- 2 leftover skinless & deboned chicken breasts shredded into mouthful pieces, from Roast Garlic Chicken recipe*
- 1 x 180g jar Obap Kim Chi, include the brine for more flavour
- 800 ml of chicken bone broth, home-made or store bought
- 1 generous tablespoon Doenjang soybean paste
- 2 anchovy fillets in oil cut roughly
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1 teaspoon salt
- 1 1/2 spring onion sliced on diagonal
- 175g soft tofu, sliced into 1 cm rounds
- 1/2 cup cooked long grain white rice
- 1/2 spring onion sliced on diagonal for garnish
- * Substitute with 2 poached chicken breasts & add 2 minced garlic cloves in the soup. Roast Garlic Chicken recipe included at end.
Method
- Put all ingredients except tofu, rice & spring onion garnish in a shallow saucepan, gently stir, cover and heat through for 10 minutes.
- Add cooked rice & gently stir to combine.
- Gently add sliced soft tofu with a wide spatula or turner but do not mix, cover and bring to a slow boil for 5 minutes.
- Ladle the soup into bowls, gently lay the soft tofu over the soup and garnish with spring onion and serve.
- *Garlic roast chicken recipe
- 1 x 1.5kg free range chicken Extra Virgin Olive Oil (EVO)6 garlic cloves, minced (I use micro plane) Salt & pepper
- Roast chicken: Wash and dry the chicken. Cut through the side of the backbone to butterfly the chicken, press down to flatten. I like to leave the parson’s nose and wing tips as they are tasty bits for the cook. Place cut side down on a plate lined with kitchen paper and place uncovered in the refrigerator for a couple of hours, as it will help to dry the skin to make it crispy. Preheat fan forced oven to 180°C. Massage minced garlic, salt & pepper and EVO, all over the chicken. Line a baking tray/roasting pan with baking paper and place the chicken on the tray. Drizzle more EVO over the chicken. Cook on bottom shelf of oven for 55-60 minutes depending on your oven. When roasted, place the chicken on a wooden board and let it rest for a few minutes. Using sharp knife disjoint the pieces into any manner you wish. Once served, spoon the pan juices over the chicken, this is liquid gold!Use leftover chicken in Roast Garlic Chicken, Kimchi & Soft Tofu soup.
